Creamy spinach, cheese, and bacon — who can say no a dish made with such simple, delicious ingredients? This savoury recipe can be used as an appetizer or snack for your next holiday party, and you can even ditch the bacon to make it vegetarian! Tasting just as rich and creamy as store-bought options, this recipe has lower fat and healthier alternatives. Pair your dip with your choice of crackers, a baguette, or chips. Ingredients:
- 1-2 tablespoons of cannabis oil – either pre-made or from scratch. Remember to start low and go slow.
- 6-8 slices of bacon (*optional).
- 1 package (10 oz) frozen chopped spinach, thawed and drained.
- 1 can of quartered, marinated artichoke hearts, drained.
- 1/4 cup red onion, finely chopped.
- 1 clove garlic, crushed.
- 1/2 cup light sour cream.
- 5 tbsp low-fat Greek yogurt.
- 1/3 cup Parmigiano Reggiano.
- 1/2 cup shredded part-skim mozzarella cheese.
- 1/2 cup shredded cheddar cheese.
- Salt and pepper to taste.
- Red pepper flakes for some spice (*optional).
Equipment:
- 7×11 inch baking dish.
- Deep frying pan.
- Measuring cup.
- Medium bowl.
- Spatula or wooden spoon.
- Serving dish (*optional).
Instructions:
- Preheat your oven to 400° F (200° C).
- Fry bacon in a pan over medium to high heat until it’s evenly brown (or your desired amount of crispiness). Drain out the oil and crumble the bacon into a medium bowl.
- Mix cannabis oil, spinach, artichoke hearts, red onion, garlic, sour cream, yogurt, parmesan cheese, mozzarella cheese and salt and pepper into the bowl with the bacon. You can save a handful of bacon to top the dish in the next step if you wish.
- Scoop your mixture into a 7×11 inch baking dish and top with cheddar cheese (*option to add remaining bacon and chilli flakes to top with the cheddar cheese).
- Bake in preheated oven for 20 minutes, or until it’s bubbling with lightly browned edges.
